“We changed our lifestyle 11 years ago and I never dreamed that I could raise a family and have the degree of health that we hold so dear.

“Raising children has been the highlight of my life so far. My husband Dan and I began having children 17 years ago and every year is filled with one delight after another. I had Sam after I had turned 40. It was a wonderful pregnancy and he was born so peacefully and healthy, at home. What a joy all of the kids are. I have so much to be thankful for.

“We changed our lifestyle 11 years ago and I never dreamed that I could raise a family and have the degree of health that we hold so dear. Friends continue to struggle with chronic health problems and yet still proclaim, “But you guys are so extreme!” Well, we are very proud of being extremely healthy. Thanks for all of the great info in Health Science.

“Our three younger children are at home most of the time with the exception of music and dance lessons. Our oldest son, Joey, chose to go back to school two years ago and is having a great experience. Of course one of the initial dilemmas of his new adventure was, “What’s for lunch?”

“Before Joey started school I went shopping at a sporting goods store that sold camping equipment. I found a small insulated cooler and a blue ice pack to put in the freezer. Next I went to the drug store and found a six-cup food container to fit in the cooler, a small four oz. container for dressing, and a thermos.

Joey makes his salad every morning. I make sure lettuce is washed, and dressing is made. There is usually something left from the previous day’s lunch (soup, brown rice, lentils, etc.) that he either heats up and takes in the thermos or adds to his salad container. Joey always takes a huge salad to school with whatever veggies are in season. Now it is carrots, cauliflower, celery, etc. Earlier in the fall it was cucumbers, tomatoes, red peppers, and all of the nice summer fruits that we grew in our garden.

“The best advice I can give people trying to make healthy choices is to keep your house your sanctuary — no refined foods, animal products, etc. Keep only whole, unrefined plant foods around. Eat before you go out and always send the kids with proper food for parties, outings, or even going to friends’ houses. The example will only help to make healthy food more visible. Kids eating vegetables out in public seems to be the best publicity for promoting a healthy lifestyle.”
