Complexity: very easy
- 2 cups spinach, well washed, stems removed, chopped
- 1 (10.5 oz.) pkg. firm silken tofu, drained
- 1-1/2 Tbsp. lemon juice
- 3 Tbsp. chopped green onion
- 1/2 tsp. garlic powder
Steam the spinach 2-3 minutes
In a food processor, puree all of the ingredients until smooth.
Chill for 2-4 hours.
Serve as dip with fresh vegetables or as a sandwich spread.
